Fluffy Bran Muffins

1 cup wheat/oat bran
1 1/2 cups unbleached flour
1/2 cup raisins or cranberries, soaked and drained
1 1/2 tsp baking powder
1 tsp baking soda
3/4 cup buttermilk
1/3-1/2 cup maple syrup
1 tbsp blackstrap molasses
2 tbsp olive/avocado/grape seed oil
1 egg (or 3 tbsp egg white or 1 flax egg)

Preheat oven to 375.
Mix all dry ingredients.
Add the fruit.
Mix all wet ingredients. Mix wet ingredients into dry ingredients and combine until just moistened. It’s very important not to overmix.

Scoop into lined muffin tin and top with granola.
Bake for 12-15 minutes.
Enjoy with a pipping hot cup of tea or coffee 💙🧁
